Suleman, who was a traditional baker of great repute, set up Suleman Mithaiwala about 80 years ago at Minara Masjid, Mohamed Ali Road, Mumbai. This outlet was then developed further by his son, Abdul Latif who was later assisted by his three sons Suleman, Irfan and Abdulla. With the passage of time, traditional sweets were diversified with new and innovative products developed that kept in tune with changing palettes, desires and eating habits, maintaining the highest standards of quality and hygiene keeping the health of their customers in mind. With changing baking methods and processes, and constant upgradation of technology being used, a need was felt for reducing the heavy dependence on maida, which had once been the main source of raw material. Innovations which were never conceived before in the making of mithais', were developed and used in the various processes of this very traditional and age old food that is generally consumed at celebrations, festivals, feasts and fetes.
