Background:
Tamarindus Indica is a fruite bearing tree native to South-East Asia India.This tree flowers in spring and its fruites ripen in winter. Tamarind fruit has skin ( outer layer ), pulp ( inner layer) and the seeds. These seeds are flat and of irregular shapes mostly oval. The seed had about 30% testa ( covering the kernel) and 70% kernel. Testa has rich brown colour and kernel is of white colour. The kernel has igredients like protein, residue fibre, Carbohydrate and oil.

Tamarind seed are throughly washed to remove the pulp if any that remains stuck to them. Tamarind Kernel is then received from Tamarind seed by removing testa by roasting. After decortication of seeds the kernel so obtainedare crushed in impact grinder and pulversied into fine powder in beaters. The oil is also removed by solvent extraction process for special applications. Such powder is known as Deoiled Tamarind Kernel Powder (DTKP)
