Method of preparing Mix Vegetable Achar:
1. Take 150gms of mix vegetables which can include ivy gourd (giloda), carrot, ginger, fresh ripe turmeric, unripe mangoes (ambamor), green chillies, pickled lemon or kerda could be used.
2. Cut equal size of the above mentioned vegetables and wash them properly. Into it add little bit of salt and lemon and leave it for one night.
3. On next day dry them on nylon cloth for 2 to 3 hours.
4. In a bowl take all the dried vegetables and add all the masala of this packet, required quantity of edible oil and prepare taste pickles.
5. Prepare this pickle according to the requirement, because vegetables do not last for longer time.
Various uses of this masala:- on top of papdi flour, on khakhara, on masala papad, for preparing bajri’s masala rotla, with khichdi, khaman and batak wada.
Ingredients:
Red Chili, Salt, Musteard Seeds, Fenugreek Seeds, Edible Oil, Compounded Asafetida, Turmeric. (All Ingredients In Powder Form)
Method of preparing Lemon Achar :
Take 300gms fresh lemons and cut them evenly. Add required amount of salt, turmeric, little oil and leave it for 15 to 20 days. After that add all the contents of the packet and 300gms of sugar and leave for some days. Leave it aside until the sugar melts and then after take into use. If one wants to prepare pickle without sugar take some oil and heat it when it cools add to the pickles.
