Yellow fin tuna is widely used as raw fish dishes, especially Sashimi/Sushi. This fish is also excellent for grilling and has become very popular in Fresh Fish preparations and in Meals. In cooked form the yellow fin meat tends to have a very light yellow/brown color. Fresh yellow fin undergoes oxidation of pigmented protein when exposed to air, so exposed flesh changes from a red to a brown color in a matter of days. The structure of the meat is quite firm, and the taste is mild. The large size of the yellow fin make it well fit for solid pack in cans. With its mild flavor and firm texture, yellow fin adapts well to numerous applications.
